Jason has spent more than a decade writing this menu in the only place a catering dish is honestly tested: live service, ninety minutes in, with a line of hungry guests in front of it. If a dish loses its texture on a chafer, can't survive a drive down 101 at 4 p.m., or doesn't earn a second plate, it doesn't stay on the menu.
That standard produced a deliberately wide menu — Italian, Mexican, barbecue, Mediterranean and California classics — with vegetarian, vegan and gluten-free dishes written as real plates rather than afterthoughts. Proteins are cut in house, sauces and dressings are made from scratch, and the seasonal sections move with what coastal and valley growers are actually harvesting.
